Ingredients

  • 1.25 lbs. of lean ground beef
  • 2 extra large eggs
  • 1 cup Old Fashioned Oatmeal (dry)
  • 1/2 cup
  • 1/2 c BBQ sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 tablespoonsparsley flakes
  • 2 tablespoonsdry minced onion
  • 3 small hard boiled eggs
  • 2 tablespoons ketchup
  • 2 tablespoons dark brown

Step 1

Mix all ingredients except hard boiled eggs, ketchup and brown sugar.Divide mixture in half.Place half the loaf in your Spring form pan. Press down the middle to form a gully. Place the three-smallhard-boiledeggs in the gully.Place the rest of the mixture thathas been formed in to the panover the top and push together the sides to form a perfect loaf. None of the eggs should show through the sides.Mix ketchup and brown sugar well and brush over the top and sides of meatloaf.Add 1 ½ cup of water to pot. Pressthe manual button and add 35 minutes so this will steam on high. Be sure your vent is set to seal.Place your meatloaf on the trivet.When the timer is up you can do a quick release of the steam button. After all the steam has released, carefully remove the lid and check to make sure your meatloaf is done. If it's not done, simply put it back in the pressure cooker and add another 5 minutes.
