Great Chili Recipe, but the amount would be enough for two for dinner. If you want to make a larger batch of Chili, double or even triple the recipe!!! This is also a Very Meaty chili. Add extra tomatoes and beans, if desired. ALSO, the recipe is a mild chili, if you like spicy, add more of the hot red pepper sauce

Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced, OR 1/4 tsp garlic powder
  • 1 lb lean (at least 80%) ground beef
  • 1 tsp chili powder
  • 2 tsp chopped fresh oregano OR 1 tsp of dry oregano leaves
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp red pepper sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15-16 oz) can red kidney beans, undrained

Preparation

Step 1

1. Peel and chop the onion to make 1 cup. Peel and finely chop/mince the garlic.
2. In a 3-quart saucepan, cook the beef, onion and garlic over medium heat for 8-10 minutes, stirring occasionally, until the beef is thoroughly cooked.
3. Thoroughly drain the beef and discard the grease. Return the meat to the saucepan.
4. Into the meat, stir in the chili powder, oregano, cumin, salt, red pepper sauce and the tomatoes, with their liquid.
5. Heat the mixture to boiling, over high heat. Once the mixture is boiling, reduce the heat just enough so that the mixture bubbles gently. Cover with the lid, cook 1 hour, stirring occasionally.
6. Stir in the beans with their liquid. Heat to boiling over high heat. Once boiling, reduce heat just enough so that the mixture bubbles gently. Cook uncovered, 20 minutes, stirring occasionally, until desired thickness.
