Ingredients
- 1 cup All-purpose flour
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1/4 cup Ground almonds
- 3/4 cup Light brown sugar
- 1 cup Rolled oats
- 1/2 cup Dried cranberries
- 1 1/2 ounces White chocolate, cut into chunks
- 1 stick Unsalted butter plus 2 tablespoons
- 1 Large egg yolk or 2 small egg yolks
Preparation
Step 1
1. Preheat the oven to 375°F.
2. Sift together the flour, baking soda, and salt into a large bowl. Stir in the ground almonds, brown sugar, oats, Cranberries, and white chocolate chunks.
3. Melt the butter in a small pan. Stir this into the dry ingredients together with the egg yolk. Mix well, then using your hands, form into walnut-size balls and arrange on two large nonstick baking sheets. Gently press them down to flatten slightly, leaving space between them from the cookies to spread.
4. Bake in the oven for 12 minutes, then remove and allow to cool on a wire rack.
