Ingredients
- 5 c. light vanilla soy milk {regular milk can be used just fine}
- 1 small package instant sugar-free white chocolate pudding mix
- 3/4 c. 100% pure pumpkin puree
- 1/2 tsp. ground cinnamon
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. ground nutmeg

Preparation
Step 1
Combine all ingredients and whisk until smooth. Refrigerate for about 2 hours before serving to chill and allow the mixture to thicken slightly.
When ready to serve, sprinkle each serving with a bit of cinnamon and nutmeg. For a spiked version, add a splash of rum.
NOTE: The result, as is, is plenty sweet enough for me. If you'd like it a tad bit sweeter, add about 1 tablespoon Stevia, Splenda, or granulated sugar.
