Ingredients

  • FOR THE CAKE
  • 1 1/4 cup boiling water
  • 1 cup Quaker oatmeal
  • EGG MIXTURE
  • 1/2 cup softened butter
  • 2 eggs
  • 1 cup Domino white sugar
  • 1 teaspoon vanilla
  • DRY INGREDIENTS
  • 1 cup brown sugar
  • 1/4 teaspoon nutmeg
  • 1 1/2 cup sifted flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • store bought Duncan Hines white frosting

Preparation

Step 1

Preheat the oven to 350 degrees F. Grease 2 round 8-inch cake pans with cooking spray.
In a large bowl, combine the oatmeal with boiling water. Cover with saran wrap and let sit 20 minutes. In a separate bowl, beat butter until creamy. Add in beaten eggs, both sugars, and vanilla. Add to oatmeal mixture.
Sift flour in a bowl. Add baking soda, salt, cinnamon, nutmeg, and brown sugar.
Add dry ingredients to Oatmeal mixture. Stir to combine and pour into greased baking pans.
Bake for 50-55 minutes. Let cool.
Spread frosting over one layer of cake, add second cake layer and top with remaining frosting. Serve warm.
