A great way to stretch out meat, and perfect to make a meatball sub with leftover pasta sauce and mozzarella cheese.

Ingredients

  • Ingredients:
  • 1 ball - 2 points, 2 balls – 5 points, 3 balls – 7 points
  • 1 zucchini (mine was 6 ounces)
  • 8 ounces ground beef (I used 20% fat – nice!)
  • 1 clove garlic, minced
  • 1/4 cup egg beaters
  • 1/4 cup fresh basil
  • 6 tablespoons grated Parmesan cheese
  • salt and pepper
  • A couple teaspoons of oil to pan fry.

Preparation

Step 1

In a food processor, mix the zucchini, garlic, egg beaters, basil, Parmesan cheese and salt and pepper. Pour into a large bowl, add ground beef and mix with your hands just until mixed through.

Pan fry the meatballs for 4-5 minutes, turning so all sides get browned. Add to your next spaghetti night, or do what I did and make and amaze"ball" sub sandwich!
