Tomato and Cucumber Salad

My friend Julie introduced me to it a couple of weeks ago and I have made it several times since. It’s best made with garden fresh tomatoes, but you could use those you buy at the store as well, as long as they are grape tomatoes, cherry tomatoes or tomatoes on the vine. The better tasting the tomato, the better tasting this yummy salad will be. The cucumbers add a great crunch and take on the flavor of the vinaigrette. Hope some of you get a chance to try it! It’s great left in the fridge for several days at a time. Just pull it out and serve with lunch or dinner.

Ingredients
- VINAIGRETTE:
- 3 large garden tomatoes, sliced into wedges
- 1 medium cucumber, cut into chunks
- 3 Tb onion, chopped
- 1/3 C vinegar
- 2 Tb sugar
- 2 Tb olive oil
- 1/2 tsp salt
- 1/2 tsp pepper

Step 1
Place all the veggies in a medium sized bowl.
2. Mix the vinaigrette ingredients together in a glass measuring cup and pour over the veggies. Toss to combine.
3. Cover and chill for 1 hour before serving.
