Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can rotel
  • 1 can (24 oz) enchilada sauce
  • 1 tsp cumin
  • 1 1/2 cups bisquick mix
  • 1 1/2 cups shredded Colby-jack cheese
  • 8 bacon strips, cooked and crumbled
  • 2/3 cup 2% milk
  • 1 egg, beaten

Preparation

Step 1

Preheat oven to 400. In the rock crock, cook beef over medium heat until no longer pink, drain. Stir in next 4 ingredients; bring to a boil. Reduce heat; simmer, uncovered for 20 minutes, stirring occasionally.

In a bowl, mix baking mix, 1/2 cup cheese and bacon. Add milk and beaten egg; stir to make a soft dough. Spoon over beef mixture.

Bake uncovered for 13-15 minutes or until golden brown. Sprinkle remaining cheese; bake 2-3 more minutes.
