Ingredients

  • 2 Chicken Breasts (4 halves)
  • 4 Tablespoons light Cream Cheese
  • 3 tablespoons fat free cheddar cheese
  • 2 Whole Jalapeños
  • 1/4 cup cornmeal
  • 1/4 cup egg beater
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • Olive oil spray

Step 1


1. Preheat oven to 350 degrees
2. Cut each jalapeño in half lengthwise. Remove the seeds and inner membranes.
Combine cream cheese and cheddar cheese (if using). Fill each jalapeño half
with cream cheese.
3. Cut a slit in each chicken breast. Be careful not to cut all of the way
through. Place a jalapeño in each chicken breast. Securely closed with a
toothpick.
4. Dip chicken in egg beater
5. Roll in cornmeal mixture
6. Spray baking dish with olive oil
7. Spray chicken with olive oil
8. Baked approx. 30 min or until internal temperature registers 160 degrees
