Triple Choc Cookies

Ingredients
- 9 tsp Unsalted butter, at room temperature
- 1/2 cup Superfine or granulated Sugar
- 2/3 cup firm-packed light brown sugar
- 1 Extra-large egg
- 1 2/3 cup all-purpose flour
- 2 1/2 tsp Unsweetened cocoa
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 2/3 cup bittersweet chocolate chips
- 2/3 cup White chocolate chips
- 2-3 Nonstick baking sheets, ungreased
- A pinch of salt

Preparation
Step 1
1. Ask an adult to help you preheat the oven to 350°F.
2. Put the butter in a mixing bowl or the bowl of an electric Mixer. Add both the sugars and beat with a wooden spoon or the whisk attachment until the mixture looks very soft and fluffy. Scrape down the sides of the bowl with a plastic spatula every now and then so all the ingredients get fully beaten.
3. Break the egg into a small bowl. Remove any pieces of shell then break up the egg with a fork. Add the egg to the mixing bowl and beat the mixture well.
4. Set a strainer over the mixing bowl. Tip the flour, cocoa, baking powder, baking soda, and salt into the strainer then sift these ingredients into the bowl. Mix in with the wooden spoon, or with the electric mixer on low speed.
5. Add all the chocolate chips to the bowl and mix in with a wooden spoon until everything is thoroughly combined.
6. To make the mixture into cookies, dip your hands in cold water so they are just damp then take a small amount of the mixture-about a rounded tablespoon-and roll it into a ball. Set the ball on to the prepared baking sheet, then make 23 more balls in the same way. Set the balls about 1 1/2 inches apart on the sheets.
7. Ask an adult to help you put the cookies in the preheated oven to bake for 15 minutes. Ask an adult to help you carefully remove the sheets from the oven and leave to cool for 5 minutes before transferring the cookies to a wire rack. Leave to cool completely, then store in an airtight container.
Eat your cookies within a week of baking them.
