The secret to potato salad is that you must mix all the ingredients while the potatoes are still hot.

If you want to peel and dice potatoes the night before put them in a large pot and cover with salted water. Doing so will keep your potatoes from browning and again, save you time when you are making 10lbs.

Ingredients

  • 10 lbs. Red Potatoes -Par-Boil- Cubed (approx 30 minutes)
  • 5 sticks of celery diced
  • 2 small onions diced
  • 8 hard boiled eggs peeled and chopped
  • Dressing
  • 2 T Oil
  • 2 t Dijon Mustard
  • 2 Heaping cooking spoons of mayo
  • 1 T salt (or to taste)
  • 2 t Celery Seed
  • 1 t black pepper
  • Blend all of the above ingredients in food processor.

Step 1

To see if potatoes are done poke with fork. Whenpotatoes are cooked remove skin from potatoes and cube. Mix the dressing in while potatoes are still hot.

Cool potato salad in fridge until ready to serve.
