- I do believe that the secret to a good pie crust is NOT to overwork the dough. And it's also important to use lard as part of the fat.

Preparation
Step 1
1. Have shortening cold and firm, but not too hard. Sift dry ingredients several times. With pastry blender, cut in the lard and margarine. Cut together till mixture resembles coarse meal. Gradually add the water, working the liquid into the dry with a knife. DO NOT OVERWORK!! Turn the dough onto a floured board or cloth and knead ONLY A FEW TIMES, JUST TO HOLD THE MIXTURE TOGETHER. Wrap in waxed paper and chill in fridge. for about 1/2 hour. Do not allow the dough to becomes too hard or it will be difficult to roll out. When ready to be baked, roll with floured rolling pin to 14 inches and fit into a 9 inch pan. Place another pie pan on top of the unbaked crust and bake about 20 mins at 400F. Remove the top pie pan and lower temp to 350F, continue to bake for 12-15 mins. till golden brown.
