Ingredients

  • CRUST:
  • 3 med baked potatoes , cooked, unpared and shredded OR
  • 2 1/2 c frozen hash browns
  • FILLING:
  • 5 eggs
  • 1 1/2 c shredded cheddar cheese
  • 1/2 c cottage cheese
  • 1 t salt
  • 1/3 c milk
  • 1 green onion
  • 1/2 c chopped mushrooms (opt)
  • 1/8 t pepper
  • 4 drops Tabasco
  • TOPPING:
  • 8 slices bacon, cooked and crumbled
  • 1/2 c crushed corn flakes

Preparation

Step 1

Crust: Press potatoes into 9-inch or 10-inch pie plate.
Filling: Make filling by beating eggs until foamy, stir in remaining ingredients. Pour into pie crust.
Topping: Sprinkle pie with bacon and corn flakes.
Bake at 325 degrees for 50 minutes, or until center is firm. Let stand 3 - 5 minutes before cutting. Makes 6 - 8 servings. Freezes well.
