  • 1 large cucumber
  • 2 Tbls rated onion
  • 1/8 tsp salt
  • 1 8 oz block of cream cheese (room temperature)
  • 1 Tbl Mayo (the real stuff)
  • dash of green food coloring

Step 1

Peel, seed and grate the cucumber. Drain by pressing between paper towels.

Place in a food processor with the cream cheese, onion, mayo and salt. Add food coloring, 1 drop at a time until mixture is a light, but bright green.

Spread mixture between 2 pieces of crust-less white bread, cut into triangles.
