Chicken Tikka Masala

Ingredients
- Chicken Marinade
- 3 boneless skinless chicken breasts
- 1/2 yogurt
- 1 lemon
- 6 cloves minced garlic
- 1 tbsp minced ginger
- 2 tsp salt
- 2 tsp cumin powder
- 2 tsp garam masala
- 2 tsp paprika
- Sauce
- 3 tbsp oil
- 1 onion finely chopped
- 2 tbsp minced ginger
- 8 cloves minced garlic
- 2 tsp cumin
- 2 tsp tumeric
- 2 tsp ground coriander
- 2 tsp paprika
- 2 tsp chili powder
- 2 tsp garam masala
- 1 tbsp tomato puree
- 3 1/2 cups tomato sauce or crushed tomatoes
- 1 1/4 cup water
- 1 cup cream
- fresh coriander for garnish

Preparation
Step 1
1. Preheat oven to 500F.
2. Slice the chicken into bite sized chunks.
3. Combine the chicken with the rest of the chicken marinade ingredients in a bowl until evenly coated.
4. Cover and refrigerate at least 1 hour.
5. Skewer the marinated chicken pieces on bamboo skewers or wooden skewers, then place them over a baking tay lined with parchment paper, making sure there is space underneath the chicken to help distribute the heat more evenly.
6. Bake for about 15 minutes until slightly dark brown on the edges.
7. Heat oil in a large pot over medium heat, then saute the onions, ginger, and garlic until tender but not browned.
8. Fry the spices for about 30 seconds to release their aromatics and flavor, stirring constantly.
9. Stir in the tomato puree.
10. Add the tomato sauce and water, then bring to a boil and cook for about 5 minutes.
11. Pour in the cream.
12. Mix in the chicken, cooking for another 1-2 minutes.
13. Serve with rice or naan bread and garnish with coriander.
