Ingredients

  • 1/2 lb bacon
  • 2 TBSP flour
  • 2 TBSP sugar
  • 1 tsp dry mustard
  • 2/3 cup vinegar
  • 2/3 cup water
  • 1-2 tsp salt
  • Dash pepper
  • 4 Large potatoes, cooked, pared, and sliced
  • 1/3 cup chopped green onions and tops

Preparation

Step 1

Heat oven to 350 degrees. Cut bacon into 1" pieces and fry until crisp. Drain off fat and save. Set bacon aside.

Combine 1/3 cup bacon fat, flour, sugar and mustard in medium saucepan. Stir until smooth. Add vinegar and water. Cook over medium heat, stirring constantly, until thickened. Remove from heat. Add salt and pepper.

Arrange 1/3 potatoes in 9 x 11 baking dish. Sprinkle with 1/3 onions and 1/3 bacon. Pour 1/3 dressing over mixture. Repeat with remaining ingredients. Bake 30 minutes or until heated through.

Double the recipe and use a 9 x 13 baking dish !!
