Ingredients

  • 1 C flour
  • 1 T veg oil
  • 1 finely chopped onion
  • 1 green bell pepper finely chopped
  • 2 ribs of celery finely chopped
  • 3 cloves of garlic minced
  • 2 bay leaves
  • 1 T fresh minced thyme
  • 1 t paprika
  • 1/2 t cayenne
  • 1/4 t salt
  • 1/4 t blk pepper
  • 2 C chicken broth
  • 2 lbs boneless, skinless chickens thighs
  • 8 ounces andouille sausage cut into thin pieces

Preparation

Step 1

put flour in s.s. pan , toast flour in oven 425 % for 40-45 mins or until flour is color of cinnamon or dark brown sugar. remove to bowl.
heat oil in s.s. pan , sauté vegetables 5-7 mins until soft, add spices and sauté 30 secs to 1 minute
add chicken broth, add chicken, cover and simmer on low for 15 minutes, or until chicken is cooked through. remove chicken to plate.
Add 2 more cups of chicken broth to the toasted flour and whisk.
add the flour slurry to the mixture on medium heat.
add sausage. cook for 20 mins.
shred chicken and add to pot.
remove bay leaves
optional to add chopped scallions
add 1 t white vinegar to brighten flavor..
check seasoning and salt or pepper to taste
Serve over white rice.
