Ingredients

  • 1 12oz bag of cherry tomatoes, halved
  • 3 scallions, white and pale green only, coarsely chopped
  • 3 garlic cloves, minced
  • 2 tbsp parmesan cheese
  • 8 fresh basil leaves
  • 3 tbsp olive oil
  • 4 oz mozzarella cheese, cut into small cubes
  • salt and pepper to taste

Step 1

- In the bowl of a food processor, pulse the cherry tomatoes, scallions, garlic, parmesan, basil, and oil all at the same time until the tomatoes are coarsely chopped, not pureed. Transfer the sauce to a large pasta bowl. – Stir in the mozzarella cheese and salt and pepper. – Toss immediately with the pasta
