Ingredients

  • 1/2 Cup unsifted flour
  • 1/3 cup cornstarch
  • 1/2 to 2/3 cup cold water
  • 1 pint oil
  • 2 tsp baking powder
  • 1 lb. cleaned and deveined shrimp
  • DIPPING SAUCE
  • 2 cups orange marmalade
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • Add Tobasco to taste

Preparation

Step 1

In a medium bowl, stir together flour and cornstarch
Gradually stir in 1/2 cup of the water and the soy sauce until batter is smooth
Add additional water 1 tbsp. at a time until the batter is just thick enough to coat the shrimp. (About the consistency of cheese sauce)
Pour the oil into a deep fryer and heat to 375F.
Stir 1 tbsp. of hot oil into the batter, stir in the baking powder
Dip shrimp one at a time and to the hot oil.
Fry 2-3 min. until golden brown.
Drain on paper towels.
