Ingredients

  • Filling:
  • 5 -8 oz. packs of cream cheese(softened)
  • 1/4 tsp. vanilla
  • 3/4 tsp. grated lemon pee;
  • 1 3/4 cup sugar
  • 4 Tblsp. flour
  • 1/4 tsp. salt
  • 4-5 eggs (1 cup)
  • 2 egg yolks
  • 1/4 cup whipping cream (heavy)
  • Crust:
  • 1 cup sifted flour
  • 1/4 cup sugar
  • 1 tsp grated lemon peel
  • 1/2 cup butter
  • 1 1 slightly beaten egg yolk
  • 1/2 tsp vanilla

Preparation

Step 1

Preheat oven 400 degrees (crust)
450 degrees initially baking cheesecake

Filling:
Beat cream cheese, vanilla, and lemon peel until light and fluffy. Mix in next three ingredients gradually blending into cream cheese. While mixing, beat in one egg at a time until well mixed. Gently stir in whipping cream.

Crust:
Combine first three ingredients into butter. Mix until crumbly. Add egg yolk and vanilla. Blend thoroughly. Pat 1/3 of dough on bottom of 9" spring form pan bottom. Bake in 400 degree oven for 10 minutes or until golden brown. Cool; attach sides to bottom, butter sides and form remaining crust to the sides of the spring board pan to hight of 1 3/4".

Increase oven temperature to 450 degrees:
Carefully pour cheesecake mixture into spring board pan with sides. Bake for 12 minutes. REDUCE heat to 300 degrees and continue baking for 55 minutes.
Remove from oven, cool completely. Loosen sides after 1/2 hour. Remove sides at the end of 1 hour. Allow to cool for 2 hours or longer. Glaze with fruit if like.
