Ingredients
- 4 cups peeled, matchstick-cut jicama
- 1 cup bias-cut scallions
- 1 cup halved grape tomatoes
- 3/4 cup seeded, chopped cucumber
- 1/2 cup thinly sliced radishes
- 1/4 cup chopped fresh cilantro
- 1 Tbsp minced jalapeno
- 1/4 cup fresh lime juice
- 2 tsp minced garlic
- 1 tsp minced lime zest
- 1/2 tsp honey
- 1/4 tsp each ground cumin and coriander
- 1/4 cup extra-virgin olive oil
- 2 Tbsp minced fresh cilantro

Step 1
For the slaw, combine jicama, scallions, tomatoes, cucumber, radishes, chopped cilantro, and jalapeno in a large bowl.
For the vinaigrette, whisk together lime juice, garlic, zest, honey, cumin, and coriander; whisk in oil. Stir in minced cilantro. Toss slaw with vinaigrette to coat.
