Fruit Cake (Miracle Fruit Cake)

Got this from my sister-in-law. Every Christmas she would make it and send it to her brother. He loves it!

Ingredients

  • 1 Cup Dates (chopped)
  • 1 cup Raisins
  • 2/3 cup Crisco shortening
  • 1 cup Brown sugar
  • 1/2 cup Molasses
  • 2 cups dried fruits and peals
  • 1 cup Walnuts (chopped)
  • 3 cups Flour
  • 2 Eggs (beaten)
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder

Step 1



In a pot bring to a boil the following:
= Dates
- Raisins
- Crisco shortening
- Brown sugar
- Molasses
- Dried fruits and peals
- Walnuts
Add 2 shots of whiskey
Cool completely

In the same pan, mix in and stir well:
- 3 cups flour
- 2 eggs (beaten)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder

Bake at 275 degrees for 2 to 2-1/2 hours
Cool completely (about 4 hours)
Wrap in Tin Foil (Reynolds Aluminum Foil)

Serve and enjoy or send to your favorite friend, relative, or soldier that’s away who would enjoy and share.

Note: When we’ve received this we keep it in the refrigerator, It lasts quite a while.
