- 2 lbs Cucumbers, sliced and halved
- 4 - 6 medium Roma Tomatoes, diced
- 1/2 medium Red Onion, sliced
- 1/2 each Green, Yellow and Red Sweet Bell Peppers, sliced
- 100 grams pitted Kalamata Olives, halved
- 150 grams Boccacini, small balls, halved
- 150 grams Feta Cheese, cubed (add last)
- 1/4 cup Extra Virgin Olive Oil
- 1/4 cup Balsamic Vinegar
- 1 tbsp Sriracha Sauce
- 1 tsp Black Pepper
- 1/2 tsp Salt
