Ingredients

  • 1 pkg. white cake mix
  • 3 lg. eggs
  • 1 1\4 c buttermilk
  • 1 \4 c vegetable oil
  • 1-3oz can flaked coconut
  • 2 \3 c chopped pecans
  • Cream Cheese Frosting
  • 1-8 oz softened cream cheese
  • 1 \2 c softened butter
  • 1-16oz pkg. powdered sugar
  • 2 tsp. vanilla
  • 1 c chopped toasted pecans

Preparation

Step 1

Cake:
Beat 1st 4 ingredients @ medium speed for 2 minutes
Stir in coconut and pecans
Pour into greased and floured cake pans
Bake at 350 degrees for 15-27 minutes
Cool for 10 minutes-remove from pan and finish coping on wire racks

Cream Cheese Frosting:
Beat cream cheese and butter until smooth
Gradually add powdered sugar until light and fluffy
Stir in vanilla and pecans
Spread frosting between layers & on top & sides when cake is cooled
Chill for 2 hrs.
