Grilled New York Strip with Chasseur Sauce

Ingredients
- Steaks
- 2 10 oz New York Strip Steaks
- 2 T Olive Oil
- S&P
- For the Chasseur Sauce
- 2 T butter
- 2 shallots quartered
- 1 C cremini mushrooms diced
- 6 oz red wine
- 2 T brandy
- 2 C veal demi-glace
- 1 T chopped parsley
- S&P

Preparation
Step 1
Coat steaks with olive wil and season with salt and pepper. Grill steaks over medium high heat and grill for apparoximately 5 minutes per side for medium rare.
Sauce
Melt butter in heavy sauce pan and add shallots and mushrooms. Saute until butter is absorbed, add wine and bring to a boil and reduce to a simmer until reduced to almost dry, 10 to 15 minutes. Add brandy and blame. Add veal demi-glace and bring to a light simmer. Finish with parsley and season with Salt and Pepper.
