PUMPKIN CAKE

Ingredients

• 3 cups sugar
• 1 1/2 cups oil
• 4 eggs
• 2 tsp. Soda
• 3 tsp. Baking power
• 1 tsp salt
• 2 tsp. Cinnamon
• 3 cups flour
• 2 cups pumpkin
• 1 1/2 cups nuts
• Cream cheese frosting
• 4 oz. Cream cheese
• 3 cups powdered sugar
• 2 TBS. Butter
• 1 tsp. Vanilla
• 1 tbs. Milk or till right consistency.
• 1/3 of this amount will frost just the top.

Preparation

Step 1

Mix sugar, oil and eggs. Add soda, baking powder, salt and cinnamon. Sift flour and add pumpkin alternately, a little at a time.

Pour into 10 inch tube pan, greased and floured. Bake at 350 1 hour and 15 min.
