Ingredients

  • 1 pie crust, good store bought one
  • 2 lg onions, slice and slowly carmelized
  • tomato slices, enough to cover top
  • 3 ears of fresh corn, cooked and cut into planks
  • shredded asiago
  • shredded mozzarella, enough to cover the bottom of the crust
  • romano cheese
  • olive oil
  • dried oregano
  • fresh basil

Preparation

Step 1

Roll out dough and place into pie pan. Brush the crust with olive oil and sprinkle with cracked black pepper. Prick the crust with a fork all over. Layer bottom with shredded mozzarella and asiago fully covering the bottom then add a good sprinkling of romano. Next add the carmelized onions and fresh chopped basil, then add the fresh corn planks with a drizzle of olive oil and more romano. Arrange tomato slices completely covering the top. Add salt, pepper and oregano. Add a final drizzle of olive oil and some romano and bake at 375 until the crust is crispy and deep golden brown. Let cool before cutting into it and garnish with fresh chopped basil.
