Ingredients
- 1/2 pound unsalted butter
- 3 C finely diced onions
- 2 C long-grain rice
- 2 C quartered white mushrooms
- 1 green pepper, diced
- 3 tins beef consomme
- 2 tins water, using empty consomme tins to measure
- 2 T fresh oregano, picked and roughly chopped

Preparation
Step 1
Preheat oven to 350 F.
Melt butter in a large pot, add onions and cook until golden.
Add rice and continue to cook until rice is also golden.
Stir in mushrooms and green peppers, cooking for 5 more minutes.
Place into a 9" x 13" baking dish and add consommé, water and oregano.
Cover with aluminum foil and bake for 1 hour until rice is cooked through.
