Ingredients

  • 1/2 pound unsalted butter
  • 3 C finely diced onions
  • 2 C long-grain rice
  • 2 C quartered white mushrooms
  • 1 green pepper, diced
  • 3 tins beef consomme
  • 2 tins water, using empty consomme tins to measure
  • 2 T fresh oregano, picked and roughly chopped

Preparation

Step 1

Preheat oven to 350 F.

Melt butter in a large pot, add onions and cook until golden.

Add rice and continue to cook until rice is also golden.

Stir in mushrooms and green peppers, cooking for 5 more minutes.

Place into a 9" x 13" baking dish and add consommé, water and oregano.

Cover with aluminum foil and bake for 1 hour until rice is cooked through.
