Creamy Chicken Mushroom Florentine

Ingredients

  • 1 lb. chicken breast
  • 1 tbsp. butter
  • 1 tsp. olive oil
  • 2 garlic cloves, minced
  • 1 \4 sun dried tomatoes
  • 4 oz small mushrooms, sliced
  • 1 tbsp. flour
  • 2 c chicken broth
  • 1 1\2 c half & half
  • 1 tsp. salt
  • 1 \4 tsp. pepper
  • 1 \2 tsp. garlic powder
  • 8 oz linguine, broken in half
  • 1 \4 c grated parm.
  • 2 c fresh spinach

Preparation

Step 1

In a skillet over medium heat add the butter & cook chicken until golden brown
Add olive oil & cook garlic, sun dried tomatoes & mushrooms until tender
Add the flour & cook for another minute
Slowly add the chicken broth, half & half, salt, pepper and garlic powder whisk until combined
Add the linguine and bring to summer, cover & Cook for 10-15 minutes
Remove from heat and add the parm. cheese and spinach until spinach starts to wilt
