- 1 loaf sourdough bread
- 16 ounces shredded melting cheese (like jack, mild cheddar,Parrano, Comte, Gruyere)
- 1/2 cup salted butter (1 stick)
- 1 bunch cup sliced green onions
- 2 teaspoons poppy seeds

Step 1
Heat the oven to 350°F. Line a rimmed baking sheet with foil.
Without cutting through the bottom of the loaf, create 1-inch-wide slices lengthwise and widthwise. You want a checkerboard look. Insert shredded cheese between the slices in the bread.
Heat a sauce pan over medium-low heat. Add the butter, green onions, and poppy seeds. Once the butter has melted completely, take the pan off the heat.
Transfer the bread loaf to the lined baking sheet. Drizzle with butter mixture. If needed, move the green onions around to spread them out.
Wrap the bread loosely with foil and bake for 15 minutes. Unwrap the bread and bake another 10 minutes or until cheese has melted. Serve warm.
