Ingredients
- 12 x2 1/2 ounce fresh mahi mahi
- 3 tablespoons olive oil
- 1 tablespoon cilantro
- 1 tablespoon garlic, sliced thin
- 12 flour tortillas
- 1 cup green cabbage, finely shredded
- salt and pepper
- Mango Salsa
- 1 fresh mango, peeled and chopped fine
- 1/4 cup cilantro, chopped
- 1/8 cup red onion, minced
- limes, juiced (3-4)
- salt and pepper
- Salsa Fresca
- Roma tomatoes, washed, cored and diced (4-5)
- 1/4 cup cilantro, chopped
- 1/8 cup red onion, minced
- 2 tablespoons orange juice
- limes, juiced (2-3)
- 3 tablespoons olive oil
- salt and pepper
- Guacamole
- 1 Roma tomato, diced
- 1 jalapeno, seeded and minced
- 3 avocado
- 1/8 cup white onion, minced
- 1/4 cup cilantro, chopped
- limes, juiced (2-3)
- salt and pepper
- Jalapeno Crema
- 2 jalapeno
- 1 tablespoon olive oil
- 1/2 cup creme fraiche
- salt and pepper

Preparation
Step 1
Fresh Fish Tacos
Combine the fish with the oil, cilantro, garlic, season well and grill over high heat.
Heat the tortillas in a pan until they just start to brown.
Lay the tortilla out, place a small pile of cabbage on top and place a piece of fish on top of each.
Top with any or all of the salsas below.
Mango Salsa
Combine all ingredients and stir.
Salsa Fresca
Combine all ingredients and stir.
Guacamole
Peel and seed the avocado and place in a bowl. Smash the avocado with a fork and add all the other ingredients and stir well.
