Ingredients
- 1 lb boneless skinless chicken breasts
- 8 ounce package of cheese-filled tortellini
- Garlic powder
- 1 cup cooked long grain wild rice
- 1 package of firm tofu
- 1 26 oz can of spinach, drained

Preparation
Step 1
1. Boil the chicken breasts in a dutch oven of water
(approximately 12 - 14 cups of water
2. Add the tortellini and cook until al dente
3. Add the spinach and rice
4. Sprinkle lightly with garlic powder
5. Add the tofu, sliced in very small squares
6. Cook approximately 5 - 8 minutes until heated
throughout
7. Serve sprinkled with parmesean cheese
