Ingredients
- 1 T. Olive oil
- 1/2 c. Chopped red onion
- 1/2 c. Red pepper (or use small red, orange and yellow)
- 1 jalapeño
- 2 cloves garlic chopped
- Sauté all above until clear!
- 2 cans black beans, drained and rinsed
- 1 lime juiced or 2 T.
- 1 t cumin
- 1 t smoked paprika
- 1 t ground mustard
- 1/2 t cayenne
- Fresh cilantro or fresh basil
