Ingredients
- 2 cups uncooked elbow mac
- 3 cups cubed chicken
- 1/2 cup cubed processed American cheese
- 1 small chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- 1 8oz can sliced water chestnuts, drained
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 1/3 cups milk
- 1 10 1/2oz can chicken broth
- 1/4 cup butter, melted
- 2/3 cup crushed saltines (about 20 crackers)
- 3/4 cup cashew halves

Step 1
In a greased 9x13 inch baking dish, layer first 7 ingredients in order listed. In a bowl, combine soups, milk, and broth. Pour over water chestnuts. Cover and refrigerate overnight. Toss butter and cracker crumbs, sprinkle over casserole. Top with cashews. Bake uncovered at 350 degrees for 35 to 40 minutes or until mac is tender.
