Ingredients

  • For the Balsamic Glaze
  • 1/2 cup balsamic vinegar
  • 2 Tablespoons honey
  • For the Balsamic Dressing
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 Tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon minced garlic
  • For the Salad
  • 1 cup mini farfalle noodles
  • 8 cups loosely packed baby spinach leaves
  • 2 cups halved cherry tomatoes
  • 1 cup mozzarella pearls
  • 2 cups grilled chicken chunks

Step 1


Stir together the glaze ingredients in a small saucepan over med-high heat. Bring to a boil, then reduce to a low simmer for 3-4 minutes or until the mixture is reduced in half. Remove and cool.
Put all the dressing ingredients in a jar and shake. Refrigerate until ready to use.
Cook the noodles. Drain and rinse in cold water, then drizzle with a little bit of oil to keep them from sticking.
Add the spinach to a big bowl. Top with the cooked pasta, tomatoes, cheese, and chicken. Pour the dressing on top right before serving and toss together.
Drizzle servings with the balsamic glaze if desired. Serves 6.

Notes

You can also serve the dressing on the side instead of mixing it in, if you prefer.
