Bisquick Cinnamon-Orange Mini-Muffins 1 Picture

Ingredients

  • 2 cups Original Bisquick mix
  • 1/4 cup sugar
  • 1/4 cup butter or margarine, softened
  • 1/2 cup milk
  • 1 teaspoon grated orange peel
  • 1 egg
  • 2/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter or margarine, melted

Step 1

Heat oven to 400°F. Grease bottoms only of 24 miniature (1 3/4x1 inch) muffin cups with shortening or cooking spray, or line with paper baking cups.

In medium bowl, stir Bisquick mix, 1/4 cup sugar, the softened butter, milk, orange peel and egg until blended; beat vigorously with spoon 30 seconds. Divide batter evenly among muffin cups.

Bake 10 to 12 minutes or until light golden brown. In small bowl, stir together 2/3 cup sugar and the cinnamon. Immediately roll tops of muffins in melted butter, then in cinnamon-sugar mixture. Serve warm.

Expert Tips:

End up with empty cups in your pan? If you've greased them, fill the empty ones half full with water. It will keep the grease from burning, and all the cups will bake more evenly.

I made these tonight but made them into regular size muffins. I used Splenda rather than sugar. To avoid a high fat content I sprinkled the Slenda and cinnamon onto the top. They are simply delicious and my substitutions made no difference in taste.

I'm sorry to say that these were really disappointing... I added extra orange peel because I got carried away and had an extra teaspoon. The batter seemed a little dry to me so I also added 1 T. OJ. There was hardly any orange flavor in my muffins. I would not have known they were orange muffins if I hadn't made them myself. The best part was the cinnamon sugar on top. I don't plan of keeping this recipe as I won't make them again.

These muffins turned out very dry. Not enough flavor to compensate for dryness. Cinamon sugar topping was excellent though.

I've been looking for a muffin recipe like this for a long time. Just tried this one. It is great and oh so easy to make. They taste good hot or cold. We like to take them with us for our lunches, if any last that long. Have made these several times since finding this recipe. Keep up the good work. Thank you for all your hard work getting these recipes to us. Looking forward to more great recipes from you.

Yum, yum. Excellent recipe. Very tasty and super easy. Fix it in 5 minutes. Delicious warm or cold. Will sure make it again. The only thing is that I found that there is no need to melt 1/2 cup of butter to dip the muffins in. 1/4 cup is enough. I ended having lot's of melted butter, but that is no big deal, I will use them in any dish.

These are very good! when they are warm they go great with a glass of milk. I made a mistake and used a whole stick of butter in the batter but they turned out alright. I might try lemon peel next but they are very good with orange peel. :)

I used E-Z Low Fat Bisquick Mix (which, since discovery, I always keep made and ready in a canister) for the biscuit mix. I made a half recipe which gave me 6 lovely full sized muffins for Sunday morning brekkie. I used a bit of dried blood orange peel, fat free milk and Splenda. My other concession to better health was to skip the butter dipping step and just sprinkle the tops with a bit of cinnamon and a light sprinkle of sugar (less than a tsp for all 6 muffins) before baking. They have a marvelous texture and are incredible with coffee.

This is my Aunt’s famous recipe for Cinnamon Orange muffins. She makes them for every family brunch we have and they are always a hit!
