Jimmy Dean Cornbread Stuffing

Ingredients

• 1 roll Sage flavored Jimmy Dean sausage
• 1 cup finely chopped onion
• 2 cups chopped celery
• 1 cup diced mushrooms
• 1 t. dried rosemary
• ¼ cup chopped parsley
• 4 cups crumbled cornbread
• 2 t. poultry seasoning
• 1 cup chicken broth
• ¾ cup chopped pecans (optional)

Preparation

Step 1

Preheat oven to 325 degrees. In a large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. Add onion, celery, mushrooms and rosemary; cook 10-12 minutes or until onion is translucent, stirring frequently. Transfer to a large bowl, add remaining ingredients, and stir well. Pour into a buttered 2-quart casserole dish. Bake uncovered for 35-40 minutes.
