Ingredients
- 15-20 ripe large tomatoes
- 5 medium onions
- 3 bell peppers
- 25 jalapenos
- 4 cloves garlic
- 1 1/4 C white vinegar
- 3 6 oz cans tomato paste
- 2 T white sugar
- 2 T brown sugar
- 8 t canning salt
- 1 T black pepper

Preparation
Step 1
Peel and core the tomatoes. Chop all the veggies coarse. Mix all ingredients in a large pot and bring to a boil. Reduce to a simmer and simmer for 40-45 minutes. Pack and seal jars.
Wash all jars in dishwasher on sanatize setting, use hot right out of the dishwasher to fill so they are still hot when filled.
Boil in water the lids and rings, dry the rings and fill the jars. Wipe off all spillage and place lids and rings on jars.
Place a metal trivet in the bottom of a large pot, place the jars on the trivet and add water, bring to boil and boil for 10 minutes. Carefully remove and allow to cool to room temperature on the counter before storing.
