Ingredients

  • 1-1 1/2 # Ground Chuck, Cooked & Drained
  • EVOO
  • 1 Onion Sliced Thin
  • 1 Clove Garlic Minced
  • 1 Yellow Pepper Sliced & Cut in Half
  • 1 Red Pepper Sliced & Cut in Half
  • 3/4 C Carrots Diced
  • 3/4 C Raisins (Soak in Water 20 Minutes)
  • 1/2 C Dry White Wine
  • 1/4 C Green Olives Sliced, Drained
  • 1 T Balsamic Vinegar
  • 1 Bay Leaf
  • 8oz Can Stewed Tomatoes, Undrained
  • 4oz Can Tomato Sauce
  • Salt & Pepper to Taste

Preparation

Step 1

Large Sauce Pan, Add EVOO,Onion & Garlic, Saute 3-5 Minutes.

Add Peppers & Carrots, Saute 3-5 Minutes.

Add Cooked Meat to Pan, Stir in Remaining Ingredients and Bring to Boil. Reduce Heat, Simmer 15-20 Minutes, Stirring Often.

Discard Bay Leaf and Serve With: Rice, Black Beans, Lettuce and/or Green Onions for Garnish.
