- 1 can Light Coconut Milk
- 1 1/2 cups Vegetable broth
- 2 Tbsp flour
- 3 Tbsp red curry paste
- 1 small Onion, chopped
- 1 tsp minced garlic
- 1 large Yukon Gold Potatoes
- 2 cups cauliflower
- 1/4 cup chickpeas
- 1/4 cup peas
- 2 Tbsp cilantro

Step 1
1. Whisk coconut milk, flour and curry paste in slow cooker. Stir in vegetables.
2. Cover and cook on low about 7 hours. Garnish with cilantro, serve over rice.
