Ingredients
- 3 pounds ground beef (lean)
- 2 eggs
- Italian bread crumbs
- 3 hard boiled eggs
- 2 carrots small dice
- 2 celery stalks small dice
- 1 small can tomato paste
- S&P
- Italian seasoning
- Sauce (optional)
- 1/2 C ketsup
- 1/4 C dark brown sugar

Step 1
In a large bowl combine beef, 2 raw eggs, about 1/2 C bread crubs, carrots, celery tomato paste about 1 t salt and 1 t pepper and 1 t italian seasonings. Combine well with your hands to make sure everything is combined well. If too loose, add more breadcrumbs.
In the bottom of a heavy bread pan add 1/3 of the meat mixture, using your fingers make a well in the bottom the long way in the middle of the pan and add the hard boiled eggs (peeled of course). Top with the remaining meat mixture, carefully pushing down around the eggs. Use your fingers to push the meat down around the edges to allow room for the grease to accumulate. The meat will rise well above the top of the loaf pan. Place on a sheet pan and bake at 350 for 50-60 minutes. It will be dark and crusty on top.
If you are feeding children, combine 1/2 C ketsup and 1/4 C dark brown sugar and spoon over it. My kids (all grown up now) loved the eggs in the middle and had to have a slice that had an egg in it.
