Ingredients

  • 8 oz. Udon noodles
  • 1 bunch scallions
  • 3 Tbs. tahini, soy sauce and rice wine vinegar
  • 2 tsp. toasted sesame oil, sugar and grated ginger
  • 1-2 Tbs. water
  • 2 cups bean sprouts
  • 1 cup shredded carrots and julienned snow peas
  • Toasted sesame seeds

Cook udon noodles as the label directs; drain and let cool. Grill scallions over medium-high heat, turning, until charred, 3 minutes. Let cool and slice. Whisk tahini, soy sauce and rice wine vinegar and toasted sesame oil, sugar and grated ginger in a large bowl. Stir in water to make a smooth sauce. Add the noodles, bean sprouts and shredded carrots and julienned snow peas; toss. Sprinkle with toasted sesame seeds.
