Found a recipe book with a cheesecake recipe. Mom adjusted this recipe, and it sounds like her "Cheesecake".

Ingredients
- 16 oz. ricotta cheese
- 1 lb. cream cheese
- 1 1/2 cup sugar
- 6 eggs
- 6 Tbls. flour
- 3 Tbls. cornstarch
- 1 Tbls. vanilla
- 1 1/2 Tbls. fresh lemon juice
- 1/4 lb. melted butter
- 2 cups sour cream

Preparation
Step 1
Preheat oven to 350 degrees
Cream all cheeses together; add sugar gradually beating. Add eggs; beat until smooth. Stir in lemon juice, vanilla, flour, cornstarch; add melted butter; mix until smooth. Blend in sour cream. Pour into a greased spring form pan.Place aluminum foil around bottom of pan to alleviate spillage.
Bake for 1 hour. Shut off oven' allow cake to remain in oven for 2 hours or longer. DO NOT OPEN OVEN DURING 3 HOURS. Let cake sit on counter for 1 hour or until cooled. Cover and chill in refrigerator overnight, then remove spring form pan.
