Ingredients
- 3 Tbsp. CREAM corn starch
- 1 1/4 cup sugar
- 1/4 cup lemon juice
- 1/3 Tbsp. grated lemon rind
- 3 eggs separated
- 1 1/2 cups boiling water
- 1 9" baked pie shell
- 6 Tbsp. sugar
Preparation
Step 1
Preheat oven 450 degrees
Add cornstarch, 1 1/2 cups sugar, lemon juice and lemon rind together. Beat egg yolks and add in cornstarch mixture. Gradually add boiling water. Heat to slow boil over direct heat, then boil gently for 4 minutes stirring constantly. Pour into pie shell.
Beat egg whites until stiff, but not dry. Gradually beat in the 6 tablespoons of sugar. Spread meringue over to of pie to touch all edges of crust. Bake in oven for 4-5 minutes or until meringue is lightly brown. Cool on cake rack away from draft. Serve cold.
