Ingredients

  • 2 (10-ounce) packages frozen chopped spinach
  • 1/2 cup unsalted butter, cut into small pieces
  • 1/2 onion, finely chopped
  • 1 (14-ounce) can quartered artichoke hearts, drained
  • 1 pint sour cream
  • 1/2 t. salt
  • 1/4 t. freshly ground black pepper
  • 1/2 cup freshly grated Parmesan cheese

Preparation

Step 1

1. Preheat the oven to 350 degrees. Cook spinach according to package directions. Drain and squeeze dry.
2. Melt butter over medium-low heat; add onions and saute until translucent, about 5 minutes. Transfer onions and butter to a medium bowl. Add artichokes, sour cream, salt and pepper. If desired, add Parmesan. Fold in the spinach.
3. Transfer the mixture to a greased casserole dish. Bake for 25 minutes or until hot.
