Brown Sugar Pecan Cookies

Ingredients
- 2 cups Butter (4 sticks)
- 16 ounces Brown Sugar
- 1 Egg
- 2 tsp Vanilla extract
- 5 to 6 cups All-purpose flour
- 1 cup Pecans, coarsely broken

Preparation
Step 1
1. Preheat oven to 350°.
2. Cream together butter and sugar. Add egg and Vanilla.
3. Add flour to mixture until an electric mixer cannot mix it. Fold in pecans.
4. Shape dough into three 2 1/2-inch rolls. Wrap rolls in wax paper. Chill over night in refrigerator.
5. Cut into thin slices and place on a lightly greased cookie sheet.
6. Bake 12 to 15 minutes or until slightly brown. Store in a tightly covered cookie tin.
Freezes well.
