Ingredients

  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp Kosher salt
  • 1 tsp sweet paprika
  • 1/2 tsp ground cumin
  • Pinch cayenne pepper
  • 1/4 grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 egg, beaten
  • 2-3 tbsp ice cold water
  • 25 pimento-stuffed olives

Preparation

Step 1

Preheat oven to 350F. Line a large baking sheet with parchment paper.

In a bowl, combine flour, baking powder, salt, paprika, cumin, cayenne and cheese and stir until well mixed. Add oil, egg and ice water. Stir until dough comes together.

Dry olives with paper towels.

Flatten 2 tsp of the dough with your fingers into a disc 2" in diameter. Place an olive in the middle and enclose in dough. Roll between your palms to seal the seams and make a uniformly smooth ball.

Place on baking sheet and repeat with remaining olives and dough. Bake until lightly browned, about 20 minutes. Remove from oven and let cool slightly.
