Ingredients
- 2 tbsp vegetable oil
- 1 leek, trimmed, washed and finely chopped
- 2 medium onions, finely chopped
- 3 cloves garlic, finely chopped
- 3 medium potatoes, cut into small cubes
- 4 1/2 cups frozen peas
- 4 cups vegetable stock
- 1 tsp dried mixed herbs or 1 tbsp chopped fresh parsley
- 1/2 cup creme fraiche
- black pepper

Step 1
In a medium large heavy bottomed saucepan heat the oil, then add the leek, onions and garlic and saute them for 5 mins. Add potatoes, and peas. Stir well and saute 2 mins. Stir in vegetable stock and herbs. Simmer for 15 mins. Let soup cool for about 10 mins. Using a blender or an immersion blender in the pan, blend the soup until smooth. Stir in creme fraiche. season with black pepper and serve.
