Ingredients

  • 4 teaspoons cornstarch
  • 1 1/4 cups skim milk
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup lowfat cheddar cheese
  • 3 potatoes, peeled and sliced

Preparation

Step 1

1. Heat oven to 350.

2. Blend cornstarch with 2 Tb milk. Cook with rest of milk, onion, s&p until thick and bubbly. Cook 1 min. Take off heat.

3. Add 3/4 cup cheese. Place half of potatoes in sprayed dish. Cover with half of sauce. Repeat. Top with rest of cheese.

4. Cover and bake 35 mins. Uncover and bake 30 mins. Let stand 5 mins.
